When was Chaiyo Restaurants founded?

Chaiyo Restaurants was founded in the early 2020s, with the aim of creating modern Thai restaurants that remain rooted in authenticity, flavour, and culture.

What does Chaiyo mean? 

“Chaiyo” (ไชโย) is a Thai expression used to celebrate, cheer, and show joy – similar to saying “cheers” or “hurrah.” It reflects the spirit of celebration, energy, and togetherness that runs through all Chaiyo restaurants.

Who is Luke Farrell? 

Luke Farrell is the founder and creative force behind Chaiyo Restaurants, renowned for his profound understanding of Thai cuisine and flavours. He has spent extensive time travelling, cooking, and learning across Thailand, shaping Chaiyo’s approach to bold, uncompromising Thai cuisine.

How is Chaiyo Restaurants linked to JKS Restaurants?

What is Ryewater Nursery?

Ryewater Nursery, based in Dorset, is Luke Farrell’s family-run nursery, growing fresh Thai produce in year-round greenhouses. The nursery supplies Chaiyo Restaurants with rare herbs, chillies, and vegetables that are traditionally difficult to grow or source in the UK.

Many of the ingredients used across our menus now come directly from Ryewater Nursery, allowing us to cook with greater seasonality and consistency while supporting sustainable, UK-grown produce.

What restaurants do we operate in London?

Chaiyo Restaurants currently operates:

Plaza Khao Gaeng – a celebration of Southern Thailand’s coast-to-jungle cuisine,  taking cues from the bustling markets, street stalls, and family kitchens that define the cooking of the South.

Speedboat Bar – a high-energy Thai bar and restaurant focused on bold flavours and late-night dining, transporting you to Yaowarat Road, Chinatown, Bangkok.

New openings are announced regularly as the group continues to grow.

What is ’True Thai’?

“True Thai” is Chaiyo’s philosophy of cooking Thai food with honesty and respect for tradition – embracing heat, balance, and regional identity rather than softening flavours. It celebrates Thailand’s diversity, from street food to regional home cooking.

How can I make a reservation for your restaurants?

Reservations can be made directly through each restaurant’s booking page on our website. Walk-ins are also welcome, subject to availability.
